Single Malt Whisky – Dutschke Sweet Semillon Cask
Nose:
Elegant yet expressive. Layers of honeyed apricot, baked pear, and golden sultana emerge first, followed by candied citrus peel and light floral esters. The Dutschke cask contributes subtle botrytis sweetness, hints of white grape must, and vanilla cream.
Beneath the fruit sits a gentle malt foundation with notes of toasted oak, almond meal, and beeswax. A faint sea-spray salinity from the Westernport coast lifts the aroma and adds balance.
Palate:
Full and textural at 48%, delivering immediate sweet citrus and ripe orchard fruit, transitioning into honeycomb, crème brûlée, and light oak spice. The Semillon influence imparts a silky viscosity and dessert-wine richness, offset by a fine thread of minerality and barley-driven spice.
Hints of white pepper, malted biscuit, and salted caramel build through the mid-palate, while the maritime maturation provides freshness and tension to the sweetness.
Finish:
Long, warming, and balanced. Notes of vanilla fudge, dried apricot, and barley malt slowly recede, leaving a clean, lightly saline aftertaste.
The oak tannins provide gentle grip, ensuring the sweetness remains structured and the finish precise, with a final echo of citrus oils and sea breeze.
